Louise's Meatloaf Ring
of my husband's favorites!
1 lb. ground chuck
1/2 lb. ground pork shoulder
1/2 lb. ground veal shoulder
2 cups bread crumbs
3/4 minced onion
1/4 cup wine
2 1/2 teaspoons salt
1 teaspoon black pepper
Heat oven to 400° F
With fork beat eggs slightly. Lightly mix in meat, then crumbs,
onions, handling lightly. Then add salt and pepper and wine.
Handle lightly (Meat will be juicier and more tender if you
handle it as little as possible).
Turn mixture into a ring mold.
Bake for 45 minutes. Unmold, pouring off excess juice.
Fill with mashed potatoes mixed
with spinach. OR fill with hot buttered vegetables. You can
also mold into a loaf and serve with mashed potatoes and a vegetable
