Instructions:
Shell and clean shrimp.
Prepare the whole grain pasta according
to the directions on the box.
Saute shrimp in butter with onion and garlic
for about 5 minutes; turn shrimp once half way through. Do
not over cook, the shrimp should be pink on one side before
you turn them. Once fully cooked, transfer the shrimp to a
serving dish; set aside. Keep the butter mixture in the origina
skillet.
Now mix into the butter mixture the salt,
pepper and lemon juice. Return to the stove and heat.
Drain the pasta. Add butter, shredded Parmesean
cheese and parsley. Make sure each is blended before adding
the next ingredient. - Cover and set aside.
Add the shrimp back in to the butter and
seasoning mixture and stir so the shrimp gets mixed in and
gets warm. (You can do this on the stove even though we did
not show it this way).
Final step is to add Angel hair pasta to
your serving plate, add the shrimp scampi and the butter mixture
to the top - then sprinkle the top with the fresh cut parsley
and serve.
