Quick and Easy Paella

Paella is a rice dish from Valencia Spain. There are thousands of versions of Paella. It may contain chicken, pork, shellfish, fish, eel, squid, beans, peas, artichokes or peppers. This "Cooking with Tristan" episode shows you how to make a quick and simple version of Paella. It tastes delicious and is also very healthy.

2 T. Chopped Garlic
2 T. Curry Powder
1 Can Peas
2 C. Mixed Seafood (you can get this at your local membership club, or just create your own mixture of your favorite seafood)
2 C. Fresh or Frozen Shrimp, devained and pealed
2 C. Imitation Crab or Fresh Crab if you prefer
2 Chicken Breasts
1 Package 10 oz. Yellow Rice

1 Stick of butter - For Sautee'ing the seafood
1 T. Olive Oil - for browning the Chicken

The first thing you will want to do is start to make the rice according to the instructions on the package.

Next, in a small pan add some olive oil to the bottom of the pan and place the two chicken breasts inside the pan on med heat. Turn them over as they cook. You will want to make sure that they are fully cooked and not pink inside.

While the chicken is cooking, add 2 T. of butter to the saute' pan and add 1 T. of the chopped garlic and 2 C. of shrimp. Continue to saute, stirring occasionally, until the shrimp turn pink. Once they have turned pink you can remove them from the pan.

Wipe out the pan and add another 2 T. of butter and add 1 T. of chopped garlic. You can then add your mixture of seafood and saute until completely cooked. Towards the end you can add in the imitation crab. Since this is already fully cooked, you are basically just heating up the crab and coating it with the butter garlic mixture.

By now, your chicken should be done and you can cut it up in small less than bite size pieces.

Your yellow rice should now be completed (it only takes about 25 minutes total). Open your can of Peas, and drain. Then combine all ingredients including the curry powder to the pot of rice. Salt and Pepper to taste if you so desire.
